Ingredients

  • 1/2cup


    plus 2 tablespoons sriracha saucedivided

  • 2tablespoons


    honey

    bonelessskinless chicken thighs (about 2 pounds)

    lime juice

  • 3tablespoons


    chopped fresh cilantro

Instructions
  1. In small bowl, mix together 2 tablespoons sriracha sauce and Place chicken in resealable plastic bag. Add remaining sriracha sauce and lime juice to chicken. Coat chicken in bag and let stand 15 minutes.

  2. Spray grill grates with nonstick cooking spray and preheat to medium. Place chicken on grill and sear on medium high on both sides. Continue cooking on indirect heat around 15-20 minutes or until chicken done (170°F.) turning several times.

  3. Transfer chicken to platter, brush with reserved sriracha-honey sauce mixture, cover, let stand 5 minutes. Sprinkle with cilantro.

Fantastic Family Friendly Italian Style Meal

Rich and robust in flavor, Italian style dishes make a family friendly satisfying meal. Through the years, Holly set out to create her own homemade recipes to satisfy her craving and of course always keeping them trim and terrific! Classic marinara sauce mixed with sirloin, garlic, mushrooms and mozzarella all rolled into a dough makes for an outstanding all-in-one meal, the Calzone from Holly’s KITCHEN 101 cookbook.

My calzones might not look picture perfect but when it comes to taste, this easy-to-make scrumptious recipe gets a thumbs up!

Servings8 calzones

Ingredients

  • 1/2pound


    ground sirloin

  • 1/2cup


    chopped onion

  • 1cup


    sliced mushrooms

  • 1teaspoon


    minced garlic

  • 1teaspoon


    dried basil leaves

  • 1/2teaspoon


    dried oregano leaves



  • salt and pepper to taste

  • 1


    can refrigerated pizza crust10-13.8-ounce

  • 1/2cup


    shredded part-skim mozzarella cheese

  • 1cup


    marinara sauce

Instructions
  1. Preheat oven 425°F. Coat baking sheet with nonstick cooking spray.

  2. In large nonstick skillet, cook meat, onion, mushrooms and garlic until meat is done; drain excess fat. Add basil, oregano and season to taste. Set aside.

  3. Unroll dough; pat and stretch into rectangle on floured surface. Cut dough into eight squares. Spoon about 1/4 cup meat mixture on each square. Sprinkle evenly with cheese.

  4. Fold dough over filling forming into a semi-circle mashing edges to form rim. Press fork along edges to seal dough. Prick tops of calzones with fork to allow steam to escape. Place on baking sheet.

  5. Bake 10-12 minutes or until lightly browned. Serve with marinara sauce.

I told my daughter Haley about the Chicken with Lemon Caper Sauce so she made it for dinner for her husband.  She called and said, “Why haven’t you told me about this recipe!”  Her husband said, this was the best lemon chicken recipe ever! I am staying most of the time with my sister and her husband in Houston during my chemo treatments at MD Anderson and all they wanted me to make was this easy lemon chicken recipe. Of course, my husband is also obsessed with this healthy lemon chicken recipe and I made it often.

Chicken Lemon Caper Sauce

Chicken with Lemon Caper Sauce
Think of this as a delicious smothered chicken with fancy flair. Serve with angel hair pasta or rice tossed with olive oil and garlic.

Ingredients

  • 1/3cup


    all-purpose flour



  • salt and pepper to taste

  • 6


    boneless, skinless chicken breastspounded thin, if desired, 4-5-ounce

  • 2tablespoons


    olive oil

  • 1teaspoon


    minced garlic

  • 1 1/2cups


    low-sodium fat-free chicken broth

  • 1/2cup


    lemon juice

  • 1/2cup


    wine or low-sodium fat-free chicken brothfat-free chicken broth

  • 1/4cup


    capersdrained

Instructions
  1. In plastic bag, combine flour and season to taste. Add chicken to coat.

  2. In large nonstick skillet coated with nonstick cooking spray, heat oil. And cook chicken breasts over medium high heat, until lightly brown, about 3–4 minutes each side. Remove chicken to plate.

  3. To pan, add garlic, broth, lemon juice, wine and capers. Bring to boil, scrapping pan for loose bits. Return chicken to pan, reduce heat, cover, and simmer until chicken is tender, about 10-15 minutes.

  • 1/3cup


    canola oil

  • 1 1/2cups


    sugar

  • 1teaspoon


    vanilla extract

  • 2


    eggs

  • 1


    egg white

  • 2cups


    all-purpose flour

  • 1teaspoon


    baking soda

  • 1 1/2teaspoons


    ground cinnamon

  • 1cup


    buttermilk

  • 1cup


    coarsely chopped fresh figsstems removed

  • 1/2cup


    chopped pecans



  • Glaze

Instructions
  1. Preheat oven 350°F. Coat Bundt pan with nonstick cooking spray.


  2. In mixing bowl, cream oil, sugar, and vanilla. Add eggs and egg white, one at a time, beating well after each addition until creamy.


  3. In small bowl, combine flour, baking soda, and cinnamon. Add flour mixture to sugar mixture, alternating with buttermilk and ending with flour. Beat after each addition.


  4. Stir in figs and pecans. Bake 40-45 minutes, until top springs back when touched. Then, let cake cool 10 minutes and then invert onto serving plate. Next, pour Glaze (recipe follows) over hot cake.

Ingredients

  • 2/3cup


    spreadable seedless sugar free raspberry jam

  • 1/4cup


    orange liqueur or orange juicedepending on taste

  • 6ounces


    reduced-fat cream cheese

  • 1/4cup


    sugar

  • 1teaspoon


    vanilla extract

  • 1teaspoon


    grated orange rind

  • 1(8-ounce) container


    free fat free whipped toppingthawed

  • 2(3-ounce) packages


    ladyfingerssplit in half (24) or angel food cake cut into pieces

  • 1/2cup


    raspberries

  • 1 1/2cups


    strawberriesstemmed and sliced

Instructions
  1. In small bowl, mix together preserves and orange juice.


  2. In mixing bowl, cream together cream cheese, sugar, and vanilla until light.  Mix in whipped topping and reserve 1/2 cup for topping.


  3. Line bottom of an oblong small dish with split ladyfingers. Layer with preserves mixture, cream cheese layer, and top with strawberries. Repeat layers with remaining ladyfingers, preserves and cream cheese layer.


  4. Carefully top with thin layer of remaining whipped topping. Top with remaining strawberries. Cover, refrigerate several hours or overnight.

This salad very quickly become my favourite lunch option during the times when I was on my journey of losing weight, as chickpeas are loaded with fibre, which keeps us feeling fuller for a long period of time.
